These melted Snowman cakes are really amusing looking treats. To make them, first we will need cookie dough. You need the dough to chill so give at least 4 hours in the fridge before you start. While your dough is chilling, begin to put together the ingredients.
You will need:
- Some Large Marshmallows
- Royal Icing
- Icing Colors (Food Color or Wilton Gel Colors of your choice)
- Mini Chocolate Chips, Silver Dragees, or other tiny candy pieces you could use for buttons and accessories on your snowman.
- Parchment Paper
Scoop a small ice cream sized dough with an ice cream scooper and sprinkle it with flour. Roll the dough into a ball and press it flat. Make it real wavy. There is no right or wrong shape. Make them all different and varied. Bake following your recipe directions. Now make the Wilton Royal Icing.
WILTON ROYAL ICING RECIPE
- 3 tablespoons Wilton meringue powder
- 1 pound of sifted powdered sugar
- 6 tablespoon of water
With a counter top mixer, mix ingredients at low speed for 7 to 10 minutes till icing forms peaks. If using a hand held mixer, it will take you 10-12 minutes. Next, transfer about 1/2 into a bowl and add a 1/2 a teaspoon of water at a time, stirring until you have a consistency that is a little runny. Put the icing in a container, covering it with a wet paper towel and a lid.
Put parchment paper on your work surface and choose a couple of cookies. With a spoon place a puddle of icing onto your cookie and with the back of the spoon work it around making sure it goes to the edges so it looks drippy, as if melting. Generously grease a plate or silicone mat with shortening, and put 8 marshmallows on the mat, spaced apart. Prep your microwave for 20 seconds. Watch the marshmallows as they start to puff up, and you are ready to proceed. Avoid them melting. Grease your fingers and get one marshmallow at a time and just plunk it into place. These are your snowmen bodies. Repeat for each cookie and then allow the icing set just a little.
Using piping bags and size 1 or 2 tips, or a zip top bag with a very small hole cut in the corner, color your royal icing the colors of your choice or you can use Silver Dragees or mini chocolate chips for buttons.
